Carey’s Banana Nut Bread

3/4 cup brown sugar (packed) 1/3 cup soft butter or margarine 2 eggs 3 ripe bananas 1/2 cup walnut pieces (or preferred chopped nuts) 1 tsp vanilla 1/2 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp salt 2 cups all purpose flour 1 teaspoon baking soda 1/2 tsp baking powder

Directions:

• Preheat oven to 350° F.

• Grease Bundt pan.

FOR BATTER

• Cream sugar, butter and eggs.
• Break ripe bananas into small pieces and throw into creamed sugar mixture.  Use electric mixer to blend into batter.  No need to mash bananas first, they will break down during mixing.
• Add vanilla and blend into batter.
• Wisk dry ingredients together; un-sifted flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
• Blend flour mixture into batter in two stages till well mixed.
• Fold nuts into batter by hand.

• Pour batter into greased pan.

TO ASSEMBLE

• Bake at 350 degrees F for 50 to 60 minutes, until a wooden tooth pick comes out cleanly from center of loaf.

• Cool for 10 minutes, then turn over and remove from pan. Finish cooling on a wire rack.
